What is a protective atmosphere (MAP = modified atmosphere packaging)?

Our products are packaged in a protective atmosphere (the »normal« air is replaced by carbon dioxide and nitrogen). Modified Atmosphere Packaging (MAP) is a well-established packaging technique which helps to keep food safe and fresh. By using a specially selected combination of gases within the product pack, MAP can increase the shelf life of certain foods.

Are our baked specialties vegan?

Our refrigerated and frozen baguettes with herb butter or garlic butter and various types of our Kaiser rolls  contain animal ingredients (butter). All other products are exclusively made with vegetable ingredients. Even the emulsifier used for baking is made from vegetable oils. Are our baked specialties free of lactose?

Lactose respectively other lacteal components can be found in our refrigerated and frozen baguettes with herb butter or garlic butter and our Kaiser rolls. Are our baked specialties free of gluten?

Because we either use wheat flour or rye flour in our products, all of our baked goods contain gluten. For further details, please take a look at the ingredients list in the detailed product information.

Do we use alcohol in our products?

We do not use any alcohol in our products. 

Do our baked specialties contain allergens?

Because we either use wheat flour or rye flour in our products, all of our baked goods contain gluten.

Is L-Cysteine (E920) used in our bakery products?

We do not use Cysteine (E920) in our bakery products, nor is it contained in the flour. Cysteine (E920), like all E-numbers, is an ingredient that must be declared. If we use this food additive we must state this in the ingredients list.
